Can I record both channels at the same time?

You can record both channels of the iTrack Solo simultaneously into your iPad, but some applications like Garageband will only let you record one mono or one stereo track at the same time. If you wish to record both channels on separate tracks you will need to use a DAW like Auria, which allows you to record more than one track simultaneously.
